Certain dishes stand the test of time and one of those classics is beef rezala, a beef curry with gravy..
Ingredients:
Beef 1 kg with bone or without bone
1 cup curd
15 to 20 cashew nuts & 5 to 6 almonds soaked
1 cup fried onion ( berista)
2 cup thinly sliced onion
5 slitted clgreen chilles
Ghee 1 cup
Fresh cream 1/2 cup
1 tbsp turmeric powder
1 tbsp red chilli powder
1 tbsp roasted cumin powder
1/2 tbsp roasted coriander powder
Salt to taste
Whole spices( cloves, green cardamom, cinnamon stick, black paper corn & bay leaf)
1 tblsp ginger- garlic paste
1/2 tsp kewra water
Method:
1. Make a paste of curd, fried onion & soaked cashew nuts & soaked almonds. Keep it aside.
2. Now heat ghee & add the wole spices. Saute for sometimes.
3. Then add the thinely sliced onion & slitted green chillies. Fry them for 5 minutes.
4. Add ginger- garlic paste & fry them untill the raw smell goes off.
5. Then add the powdered masalas & salt & cooked adding littly by little water.
6. When all the masalas cooked well add the meat. Saute for 5 to 10 minutes & cover it for cook. Stir in between the cooking process & check the quantity of water if needed add more water. Otherwise it can burn.
7. When the meat become tender & soft add the onion curd paste. Stir & simmer it again for 10 minutes.
8. At last add the fresh cream & kewra water mix togather.
9. Beef rezala is ready to serve.
