SHRI LANKAN COCONUT EGG CURRY

The egg is boiled and then fried till it gets a nice brown outer layer and then dipped in rich coconut curry and served hot. Serve the Sri Lankan Style coconut gg Curry along with Steamed Rice. It is so tasty.

Ingredients:
6 hard boil
As required cooking oil
4 dry red chillies
Some curry leaves
1 cup fresh grated coconut
1 inch ginger
8-10 garlic cloves
1 cup chopped onion
1 chopped tomato
Salt to taste
1/2 teaspoon turmeric powder
1 teaspoon roasted cumin powder
1/2 teaspoon red chilli powder
4 slitted green chillies
Bunch of coriander leaves.

Method:
1. Hard boil eggs peel them & shallow fry them & keep aside.
2. On the other hand, heat cooking oil in a pan. Dry roast the red chillies, some curry leaves & fresh grated coconut. Keep aside.
3. Again heat some cooking oil & shallow fry  ginger, garlic cloves, chopped onion & chopped tomato.
4. Now grind all the ingredients along with salt & turmeric powder. Make a paste.
5. Now heat some oil & add the paste in it. Add roasted cumin powder & red chilli powder. Cook them well by adding little by little water.
6.  Then add enough water to make gravy . Add the eggs & slitted green chillies. Simmer it for 5 minutes. Garnish with fresh coriander leaves.
