Papad ki sabji is a traditional Rajasthani Madwadi dish. The ingredients for making this delightful Rajasthani curry are all easily available in most Indian kitchens. It is so tasty & also healthy.. Rajasthan is a warm place so that usually the people of Rasthan use curd or yogurt in their dishes..
2 roasted papad
Some oil
1/2 tsp black mustard seeds
3 dry red chillies
1/2 tsp roasted cumin seeds
Some curry leaves
Pinch of hing
2 big onion chopped
3 green chillies slitted
1 tsp ginger-garlic paste
1 tsp red chilli powder
1 tsp turmeric powder
1 tsp roasted cumin powder
1 cup beaten curd salt to taste
1/2 tsp garam masala powder
1. Roasted papad on direct gas flame & keep aside.
2. Heat some cooking oil.
3. Add dry red chilli, black mustard seeds, roasted cumin seeds, curry leaves & hing. Let it spluttur.
4. Then add chopped oinion, & green chilli & fry them. Then add ginger-garlic paste & saute well.
5. Now add red chilli powder, turmeric powder & roasted cumin powder & cooked well by adding little by little water.
6. When the raw smell of the spices are gone add the beaten curd & stire continuously .
7. After 1 boil add salt to taste & crushed the roasted papad. Stire for 5 minutes.
8. At last add garam masala powder & garnish with roasted papad.
