Fermented gram flour and yogurt batter steamed, cut into cakes and tempered with mustard seeds, curry leaves & slitted green chillies.. And the final taste comes from the sugar syrup.. This sweet & sour snack consume in breakfast or evening snacks in Gujrat..
2 cup gram flour
2 tblsp semolina
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp citric acid ( lime juice or vinegar)
2 tblsp oil
Water for required
1 tsp black mustard seeds
3-4 slitted green chillies
Some curry leaves
3 tblsp sugar
Method:
1. Make a smooth batter of gram flour, semolina, baking soda, baking powder, salt, citric acid ( lime juice or vinegar ) , oil & water as required.
2. Grease a plate with butter & pour the batter to it.
3. Preheat a wok for 10 minutes with 2 glass of water. Add a stand in it.
4. After 10 minutes add the plate in the wok & lid it for 30 minutes. After 30 minutes cheack the dhokla with a knife. It can take some more time.
5. Now in another pan heat some oil or ghee, add black mastered seeds, green chillies & some curry leaves. Let it splutter.
6. Then add 1 cup of water & sugar in it & boil it for syrup.
7. Pour this syrup on the dhokla & cut it with your desire shape & enjoy it.
